Recipe broccoli soup with bacon; a healthy soup on the table in no time
A recipe for broccoli soup. My children think it's fine to eat broccoli, but when I indicated that we would eat broccoli soup, I immediately started crying. “Arrgghh, yikes” said one and “ohhh no huh” the other. As if they agreed in advance. Every time something new is put in front of them (soup or something else) they grumble. Maarrrrr… I managed to surprise them with this delicious broccoli soup recipe! Advantage for my hubby and myself… it is low in carbohydrates, healthy and ready quickly.
While eating the soup, one said “Mmmm, nice mom” and the other “I don't taste any broccoli at all”. To finish with a beautiful picture of a huge broccoli soup mustache instead of the well-known milk mustache! Unfortunately I was not allowed to take a picture of this. Apparently this broccoli soup recipe is just as good as my famous zucchini soup.

My children are real soup eaters, so I try to prepare a fresh soup at least once a week. It doesn't always work, but this is the guideline. By the way, always a soup that is eaten as a meal, so is this broccoli soup recipe.
What do you need for this broccoli soup recipe?
2 bags of pre-cut broccoli (or you can get fresh, but I like it easy)
zucchini, 2 pieces
2 onions
splash of olive oil
4 garlic cloves
1.8 liters of chicken stock
1 pack of herb cream cheese
250 grams bacon cubes
salt and pepper
curry powder

How do you make the broccoli-soup recipe?
This broccoli soup recipe is very easy to make. It only takes a little bit of cutting and in principle you have a delicious fresh broccoli soup on the table within 25 minutes that is extremely healthy! If you use this soup maker, you don't have to worry about it at all!
Chop the onions and crush the garlic for this broccoli soup recipe. Saute the onions with the garlic in a wok. While the courgettes are cut into cubes (doesn't have to be very fine).
When the onions are translucent, add the courgettes and broccoli and fry for a while, stirring. Add some salt, pepper and curry to taste. In the meantime, prepare 1.8 liters of chicken stock in a large pan.
Put the vegetables from the wok into the large pan when the stock starts to boil. Let it simmer for another 15 minutes. During this fifteen minutes you bake the bacon cubes nice and crispy.
After 15 minutes, run the immersion blender through and ensure an even mass. Then stir in the herb cream cheese and heat through. Let the bacon cubes drain and you're done with your broccoli soup recipe!

Serving the broccoli-soup
Just before serving, toss a handful of bacon into the soup. Because the bacon itself is a bit saltier and gives your soup this salty taste, you can take it easy with this recipe when adding salt beforehand.
You probably still have some soup left over. Save for lunch the next day, or freeze… handy too!
