Recipe:noodle soup with marinated chicken, broccoli and pak choi

By using seasonings such as herbs, oil or peppers, you give your soups just that little bit extra. Because there is already enough boring soup. Enjoy this noodle soup with marinated chicken, broccoli and bok choy.

For 4 people, preparation time 45 minutes

Ingredients

  • 4 chicken legs
  • 2 tbsp clarified butter or ghee
  • 2 spring onions
  • 2 garlic cloves
  • 3 cm ginger root
  • 125 ml mirin (Japanese rice wine)
  • 3 tbsp red miso paste
  • 3-4 tbsp soy sauce
  • 2 tbsp sweet and sour chili sauce
  • 350 ​​g broccoli
  • 3 mini bok choy or Shanghai bok choy
  • 1.5 l chicken stock
  • 350 ​​g ramen noodles
  • ½ handful of basil leaves
  • 1-2 tbsp black sesame seeds

Preparation

  • Remove visible fat from the legs, sprinkle with salt and pepper. Heat the butter/ghee in a frying pan and fry the legs until brown on all sides. Place the seared legs on a plate and let it cool down.
  • Finely chop the spring onion. Peel the garlic and peel the ginger. Finely chop both. Fry the spring onion with the garlic and ginger in the remaining shortening. In a bowl, mix the mirin with the miso paste, soy sauce and chili sauce.
  • Detach the chicken meat from the bone and cut into strips. Return the chicken to the pan and add the mirin sauce. Let it simmer for another 5 minutes and thicken. Return the chicken meat to a plate and keep warm.
  • Divide the broccoli into small florets and cook them in salted water for 4-5 minutes until just al dente. Place them in a bowl of ice water and drain. Separate the pak choi leaves or cut the heads into quarters. Pour the stock into the casserole and bring to a boil. Add the pak choi and noodles and cook for a few minutes until the noodles are al dente (see package directions).
  • Divide the basil leaves and broccoli florets among 4 wide bowls. Season the soup to taste and divide between the bowls with the noodles and the pak choi. Add the chicken strips and sprinkle with the sesame seeds.
