During the National Week without meat, all Dutch people are challenged to discover how delicious vegetarian food can be for a week. Try this recipe of oriental crispy minced meat with pak choi and basmati rice.
The vegetarian range has grown to such an extent in recent years that there is a vegetarian variant for every meat product! For example, replace minced meat with vegetarian Quorn minced meat. With this delicious Eastern meal you will get through the week!
Ingredients
- 300 g basmati rice
- 300 g Quorn finely chopped
- 2 Shanghai bok choy
- 4 spring onions
- 1 lime, the juice
- 15 g coriander
- 15 g flat-leaf parsley
- 15 g mint
- 2 cloves garlic, crushed
- 5 cm ginger, grated and cut into fine strips
- 2 tbsp soy sauce
- 2 tsp honey
- 2 tsp Chinese 5 spice herbs
- 1 tsp sesame oil sunflower oil
- salt and pepper
Preparation method
- Prepare the basmati rice according to package directions.
- Cut the Shanghai pak choi into strips and remove the stems from the herbs. Finely chop the spring onion and keep a third aside for garnish.
- Heat sunflower oil in a frying pan and add the minced meat together with the garlic and ginger to the pan and stir-fry for 2 minutes on high heat.
- Add the lime juice, soy sauce, honey, Chinese 5 spice herbs and sesame oil to the pan and stir everything well so that the minced meat can absorb the flavor of the herbs. Also add the Shanghai pak choi and spring onions to the pan and stir fry for another 5 minutes. Taste and season with salt and pepper.
- Serve the crispy minced meat together with the basmati rice and the fresh herbs and garnish with the reserved spring onions.
