Make your own nachos with cheese, a mountain of vegetables, a little minced meat and then in the oven. Delicious with homemade guacamole that is also very simple to make. If you are going to make these nachos, you are sure to surprise everyone at the table (or at the drink). Packed with vegetables and flavor, this nachos recipe can be made in 15 minutes. And those colors <3 .

I also added some minced meat when making these nachos, but that is not really necessary. Even without minced meat, these nachos are delicious to serve on the table. When I started making these nachos, my approach was to actually serve them as a meal. A bit à la Gauchos where you get them as a gigantic starter in quantities that you know for sure that you won't need a main course afterwards 😉 .
tip:You can also easily make guacamole for the nachos yourself!
If you are going to make nachos, first consider what your approach is to determine the quantities. In this recipe I have based on the requirements for a family of 2 adults and 2 children.
Place the nachos on a large plate or in a bowl. Divide the bean-minced meat mix over the nachos in the middle. Then top with the corn, the tomato and the chopped onion. Divide the grated cheese on top and put the dish or plate in the oven for 5 minutes so that the cheese can melt. Finally, when making nachos, sprinkle some nice fresh coriander over it and you're done.
Of course you can make the nachos even tastier with a good guacamole. After the dish comes out of the oven and the coriander is on top, put a good dollop of guacamole over the nachos.
psssttt… you can of course also make the most delicious guacomole yourself with one of these delicious recipes.
Tip:serve with a nice fresh salad, such as this waldorf salad recipe. But also just some iceberg lettuce is enough!
