Baking with aquafaba (the liquid from chickpeas)

Did you know that you can bake with the liquid from chickpeas? For example, you can make vegan meringue out of it, but that's not the only thing.

How do you make vegan meringue?

Ingredients

  • The liquid from a 400 gram can of chickpeas
  • 150 grams of sugar or powdered sugar
  • Vanilla extract or powder.

Get started

1. Preheat the oven to 100 degrees.

2. Collect the liquid from the chickpeas in a bowl. Mix this for a few minutes with an electric mixer. Slowly add the sugar and vanilla extract. Keep mixing until the mixture is stiff. This can take about 10 minutes in total. You should be able to turn the bowl upside down without the mixture falling out.

3. Line a baking tray with baking paper and make swirls of the batter.

4. Place the meringue puffs in the oven for 1.5 hours at a temperature of 100 degrees. Then let them cool in the oven for 2 hours. In the meantime, do not open the oven.
