The professional has indeed centered one of his recent culinary innovations around the dish and created… the banana split with foie gras! The dish, served in The Ranch restaurant in the city of Anaheim, is far from complex to prepare:the chef first incorporates the foie gras into a thick vanilla ice cream (we do not know the proportions, however , so better take it easy!), then he covers it all with a homemade chocolate shell. Everything is seasoned with a strawberry coulis and banana jelly, and served with a peanut crumble and a vanilla sabaillon (mixture of white wine and egg yolks).
