Apricot crumble by Cyril Lignac:the gourmet recipe with good seasonal products!

It's high season for apricot ! From June to August, this orange summer fruit very round, very velvety, with its juicy and sweet flesh, lends itself to many recipes . Full of vitamins and sunshine, it cooks very well in pies, cakes, cold soups but also in crumbles . This typical English dessert, made up of a fruit compote and a crispy crumbled sweet pastry, is ultra gourmet and easy to do . Generally, all you need is good seasonal fruit, an egg, butter, sugar and flour. And that's good because the chef Cyril Lignac recently shared to RTL listeners an easy apricot crumble recipe. But to make the difference and make the preparation tastier, he has his little trick. He uses ground almonds to make the crumble. "You can also do it with ground hazelnuts or pistachios" suggests the chef.

Chef Cyril Lignac's apricot crumble recipe

The ingredients of the recipe for 4 people:

  • 8 apricots from Roussillon or the Rhône Valley
  • 50g butter
  • 50 g of sugar
  • 50 g ground almonds
  • 20g flour
  • 1 egg
  • Honey
  • Lemon juice

Preparation steps:

  1. Preheat your oven to 180 degrees.
  2. In a saucepan or in the microwave, melt your butter over low heat.
  3. In a bowl, whiten the butter with the sugar, whisking vigorously.
  4. Then add the ground almonds, flour, egg and mix with your hands to crumble the dough.
  5. Wash and cut the apricots in half.
  6. In a pan, brown a piece of butter, a drizzle of honey and the lemon juice. Add the apricots to caramelize them and cook for a few minutes.
  7. In a baking dish, place the apricots. On top pour the crumble.
  8. Bake the whole thing in the oven at 180°C for 15-20 minutes. Enjoy!
