Everyone in the kitchen:Cyril Lignac delights our taste buds with his snow egg recipe

GENERAL INFORMATION

INGREDIENTS

  • 4 eggs
  • 80g of sugar
  • 80g vanilla sugar
  • 75cl of whole milk
  • 25g toasted slivered almonds

PREPARATION

  • Crack the eggs, separating the whites from the yolks. Start beating the egg whites using the mixer or by hand. Add the sugar in rain and let meringue. Stop the rise when the whites are creamy.
  • Meanwhile, pour the milk into a saucepan and start heating.
  • Form the eggs with a spoon, without trying to form them regularly, then place them on the milk over a very low heat. Let them cook for 2 minutes, flipping them halfway through. When cooked, place them on a plate and set aside to cool.
  • In a bowl, whisk the egg yolks with the vanilla sugar until the mixture whitens. Add the hot milk from the egg whites, mix for a few seconds and pour back into the saucepan. Cook over low heat for 4 minutes, stirring with a spatula over medium heat, until the cream thickens. You can check the cooking by passing your finger along the spatula, the cream that remains on the sides must remain frozen. Set your cream aside, when it starts to cool put it in the fridge.
  • Pour the cream into the plates. Place egg whites on top and sprinkle with toasted slivered almonds.
