Today June 18 is International Sushi Day. An extra reason to eat sushi. And we don't mind that at all. Our tip to celebrate this day extra fun is to make a real sushi cake. Poké Perfect shares the recipe for their festive PoCake that you can prepare at home.
What do you need?
- 300 grams of sushi rice
- 175 grams of sushi quality salmon
- 1 avocado
- 150 grams of cucumber
- 80 grams of mango
- 30 grams spring onion
- 80 grams of edamame beans
- 3 nori sheets
- 2 teaspoons orange masago (fish eggs)
- 2 tablespoons black/white sesame seeds
What is the method of preparation?
- Prepare the rice according to the instructions on the package.
- Cut the salmon with a sharp knife into cubes of approximately 1 x 1 cm.
- Cut the avocado, cucumber and mango into cubes. Cut the spring onion into thin rings. If using frozen edamame beans and/or orange masago, thaw them in hot water.
- Take the nori sheets, put them on top of each other and cut the corners around them. Keep cutting until you have three equal circles.
- Put the cut nori circles on a work surface and take a spoon. press the sushi rice onto the tray with the back of a spoon. Continue until there is a thin layer of rice on the nori.
- Decorate the different nori rice layers with the salmon, avocado, cucumber, mango, spring onion and edamame beans. Decorate it to your heart's content - it doesn't matter where you put the ingredients. It's your party!
- Finally, put the three layers on top of each other. If you notice that the cake is sinking slightly in the middle, reinforce those spots with some extra sushi rice. This way you create a solid foundation. Sprinkle the top layer with the orange massago and black/white sesame seeds.
