Zucchini is a vegetable that tastes great on the grill and is both convenient and easy to grill. It is also very easy to vary and is suitable for multiple dishes. Brush on a spice mixture before or during grilling for extra juiciness and flavor. Then combine with one of the tips below. Depending on how you combine the zucchini, it can be perfect as a side dish or even as a main course!
Grill zucchini with perfect results
1. Prepare any marinade/spice mixture well in advance
2. Cut into equal slices or strips (max. 1 cm diameter) so that they are evenly grilled
3. Brush with a thin layer of olive oil, followed by a spice mixture (it is also possible to do this while grilling as the zucchini absorbs the marinade immediately)
4. Set the grill to medium heat and wait for it to get hot
5. Place the vegetable slices on the grill rack, leave the lid open
6. Grill on direct heat on both sides until they develop color and nice grill marks
7. Ready to be served!
1) Grilled zucchini – 3 different marinades Zucchini is always extra tasty with a good marinade. Try one of our favorites below!
Garlic Marinade: Mix garlic powder with a little olive oil, balsamic vinegar, parsley, basil, salt and pepper.
Butter and lemon marinade: Mix about 30 g butter, 3 finely chopped garlic cloves, 1 teaspoon Italian herbs, juice of 1 lemon and a little salt.
Chili spice mixture: Mix a little sea salt, 1 teaspoon chili flakes and a little lemon juice.
2) Grilled zucchini and aubergine Eggplant and zucchini are a perfect side dish for a Mediterranean-inspired barbecue meal. The eggplant is prepared and grilled in the same way as zucchini, ie. you cut it into centimeter thick slices and grill on direct heat until you have a nice grilling surface on both sides. Then combine with one of the above spice mixes for extra taste and you have a super tasty side dish!
3) Grilled Zucchini Boats
Make your own zucchini boats! Start by cutting the zucchini into a boat shape and digging out most of the contents. Then fill in your choice – it can be e.g. a shrimp puree or something else. Finish with grated cheddar or edam cheese. Place the boats on the grill over low heat with the lid on, let them heat for a few minutes until the cheese has melted. Delicious!
4) Grilled Zucchini Salad with Mozzarella Cut mozzarella cheese into centimeter thick slices and arrange neatly on a plate along with your grilled zucchini slices. Sprinkle with some olive oil and season with salt and pepper. Voila, you have a simple and tasty starter!
