How to fry cod
If you have time, it's a good idea to let the fish come to room temperature by sitting on the counter for 15 minutes before baking. There is nothing better than baked cod with a crispy crust and a juicy soft inside. The cod is tender and may only be heated a little, it takes a while to fry the cod.
Start by dividing the cod fillet into portions and dry it well. Sprinkle with a little salt.
Use good heat, but not so hot that the pan smokes. Fry the cod in a neutral oil with the skin or skin side down.
Let the fish rest in the pan until it has a good golden crust and is 2/3 cooked through.
Turn the fish over, reduce the heat and cook the other side for a few minutes as well. If you want to fry the cod in butter, add butter when the fillet has been turned and the heat is low.
Spices can also be added to give variation in taste. The fish is tender and cooked through as soon as it cuts through. The cooking time depends on the thickness of the fillet.

How to poach cod
If you want to poach the cod, you can soak it in ice water for an hour. Then the fish retains the fine, white color of the flesh. Then a recipe such as oven-baked cod with chorizo comes into its own.
The cod should not boil, but soak for 5 to 10 minutes in water just below the boiling point.
Remember that cod is well salted needs water. Calculate about half a deciliter of salt for every liter of water. As soon as it is ready, the cod should be removed from the boiling water so that it does not become too salty.
