Ingredients for 6 people:Landais pudding 450 g, Granny-Smith apple 2, salad 150 g, walnuts 3, butter 30 g, cinnamon 4 g, civet 1/ 4 bunch, Serrano ham 110 g.
Chop the lettuce, remove the skin from the sausage, cut into slices and mash it with a fork,
Peel the apples and dice them, put them in a saucepan with the butter and cinnamon 8 minutes, set aside.
Julienne the Serrano ham.
Chop the chives.
Open the nuts, shell and crush.
Dressage:
In the bottom of the verrine place a little hatching of lettuce, (possibly a few drops of vinaigrette), then add blood sausage, then on top of the apples, then a few broken pieces of walnuts, finish with julienned Serrano ham and sprinkle with chives.
