Among the fruit wines commonly made in the provinces, orange wine is typical of the south. Colette sang of the wonders of it, and that is why we call "wine of Colette" the orange wine, served as an aperitif in Provence, like all sweet wines. It is also served at New Year's and for Christmas celebrations.

Wash and cut the oranges into quarters without peeling them. Cut the lemon into slices without peeling it. Put the fruit in a large glass carboy.
Add the vanilla pod and mix, then pour in the red wine. Cap tightly and leave to macerate in the fridge for 1 month.
Line a colander with muslin and place it in a basin. Pour in the contents of the carboy and wash it.
Pour the liquid obtained again into the carboy and add the sugar, mix. Finally pour the brandy and cork again. Let sit for 45 days before tasting.
Maceration:1 month and a half at least
You can easily age this orange wine for 2 or 3 years so that it gradually takes on a cooked wine or sherry flavor.
