The Bellini, a Venetian cocktail designed to refresh elegant women on hot summer afternoons, has been a must in all cocktail bars around the world since 1948. Refreshing, light and delicate, it is synonymous with celebration and sophistication. It is a cocktail considered rather feminine, like the famous Cosmopolitan immortalized by Sex in the City, but there is no valid reason why men cannot also enjoy its fruity sweetness. Rather than buying peach syrup which may be heavy in sugar and poor in taste, we advise you to buy very ripe and juicy white peaches. Peel them and put them in a blender until you get a peach nectar. Sweeten the nectar with fine white sugar. Refrigerate for two hours. Pour the peach nectar into a flute, fill with champagne or crémant and stir gently. You can replace the champagne with Prosecco, an Italian sparkling wine, and add raspberries to the rim of the glass.
Have you noticed that it is almost impossible to go to a party with friends without at some point someone decides to make mojitos for the whole assembly? With sometimes great successes, but also a lot of misses (lukewarm cocktail, not enough mint, too much rum…). Here is the real Cuban mojito recipe. Line the bottom of the tumbler glasses with seven fresh mint leaves. Pour in 3 cl of squeezed lime juice and two teaspoons of brown sugar. Crush the mint without however shrivelling it at the bottom of the glass. Add 6 cl of Cuban rum. Fill the glasses with crushed ice to the rim and pour in sparkling water. Cut a slice of lemon to put on the rim of the glass and serve with two short straws. Why two straws in the mojito? This is in case the crushed mint leaves clog one of the straws:the other serves as a backup straw. Well thought out, isn't it? Even if, in fact, we use it more to share our drink with our lover. Pour 100ml of grape juice, 100ml of apple juice and 30ml of grenadine into a shaker. Add a pinch of fine sea salt. Squeeze half a yellow lemon over the shaker (choose a very tender lemon which will give more juice). Add a few ice cubes (or crushed ice) to the mixture. You can add a vanilla pod if you wish. Close the shaker and shake it with energy and mastery while imagining yourself being Tom Cruise in the movie "Cocktail". Take a cup and moisten its rim with half a lemon, then sprinkle the edges with white sugar. Pour the mixture into the cup. Garnish the cup with a slice of lemon.
