Combine almonds, sugar and flour in a terrine. Add the raw egg whites and mix with a wooden spatula to obtain a homogeneous mixture.
Using a spoon, place small heaps fairly spaced from each other on the baking sheet. Then flatten each meatball with a fork, giving it a round shape
Bake in a hot oven th.7 (200°C).
Take the tiles out of the oven using a triangular palette and place them in a tile mold to give them a curved shape or, failing that, on a rolling pin.
My advice:Personally, I flavor these tiles with the juice of 2 oranges from which I have taken the zest, which I have cut into a brunoise, this one blanched, I then add to the mixture above brunoise and orange juice.
