Cut the tops of the apples and remove the flesh with a teaspoon, without piercing the skin, remove the core and the pips. Lemon the inside of the shells.
Mix the apple flesh with the onions, the peeled cucumber (keep 6 slices for decoration), 6 sprigs of coriander, the oil, the juice of the other lemon , tabasco, salt and pepper until you get a smooth soup.
Chill for 1 hour.
Divide the soup among the cored apples. Garnish with diced tomatoes, cucumber slices and remaining cilantro.
Serve chilled
