Prepare the donut batter
Cut off the head of the prawns then shell the tails, leaving them whole.
Peel the onion and cut it into rings 1 cm thick.
Wash and dry the eggplant and zucchini, cut them into 1/2 cm strips.
Heat the frying oil to 180°C.
Coat the vegetables and prawns in the fritter batter, then dip them in the hot oil and cook for 2 to 3 minutes, turning them over.
Drain on absorbent paper and serve immediately.
