Medley of prawns and melons with three mints


Ingredients:4 people
  • Yellow Melon
    1
  • Charentais Melon
    1
  • Peppermint
    a few leaves
  • Spicata mint
    a few leaves
  • Monarda mint (lemon balm)
    a few leaves
  • Cooked large prawns
    20 pieces
  • Couri Cream Vinaigrette
    4 tablespoons


Preparation:

Strip the rind off the melons and cut them into thin strips.

Stem the cooked shrimp.

Chop a little of the 3 mints and reserve a few whole leaves.

Arrange the slices of melon, alternately, harmoniously on a plate.

Lay the prawns, mint chops and leaves on top.

Serve a lightly creamy curry vinaigrette on the side.
