Prepare the cottage cheese mousse:
Mix and beat the cottage cheese with the sugar.
Whisk the 2 egg whites until stiff, adding a pinch of salt.
Pour in the vanilla sugar while stirring.
Combine the mixture with the sweet cottage cheese.
Pyramid:
Whip the cream cheese mousse preparation with the lemon zest.
Pipe into the molds and add 2 raspberries. Place a disc of frozen lemon cream beforehand and cover with almond biscuits soaked in raspberry juice.
Transfer to the blast chiller and unmold.
Glaze with neutral glaze.
Place one pyramid per plate. Leave to thaw for at least 2 hours in the fridge.
Pour a little coulis and decorate with fresh fruit and mint leaves.
