Preparation
Brew your tea.
Mix the chocolate cut into pieces and the tea in a saucepan over the heat.
Melt the chocolate until smooth.
Pour everything into a salad bowl that you will place in your ice bath.
Whip the emulsion using an electric mixer.
Take your bowl out of the bath before the foam gets too set.
Observations
Some will find the taste too intense compared to a classic mousse.
