To avoid any deterioration of my food during the freezing process, I guarantee my freezer a temperature below -18°C.
Aside from salads, EVERYTHING can be frozen:fruits and vegetables, homemade preparations, aromatic herbs, charcuterie, bread, etc.
Warning ! Pit your fruit beforehand and remove stems, leaves and stems.
For vegetables, I first immerse them in boiling water for 3 minutes to preserve texture and flavor as much as possible.
To guarantee even better freezing, I use suitable airtight containers and I do not forget to note the date of freezing and the nature of the contents.
Fruits &vegetables:2 years
Sea fish:2 years
Cooked meals:18 months to 2 years
Meat:15 to 18 months
Oily fish:9 months
My grandmother often told me:"Canned food, nothing could be more practical!".
If the jars have been well sterilized beforehand, there is no need to worry about the preservation of the food.
To do this, I immerse my jars for at least 2 hours in boiling water with a hint of baking soda and let them dry. Above all, no tea towel!
Before being introduced into the jars, the food must be as hot as possible.
I then fill my jars as much as possible to leave only about two centimeters under the cork.
I prefer the most airtight jars (usually those with a rubber washer).
I then place my preserves upside down in a dry, cool place away from light.
