The basic principle for implementing these tricks is to wash well his vegetables. All pesticides and other chemicals lodge in the skin vegetables. So take the time to wash them.
In soup, salad or mashed potatoes, most of what you normally throw away is perfectly usable… A few examples? The salad leaves a little withered, the radish tops , carrot or potato peelings.
Slightly damaged zucchini, which were going to go in the trash, will make a perfect soup if you add an onion, a clove of garlic and some herbs.
Ditto for apple or pear peelings, or slightly damaged fruit, which will end up in sauce or in jam .
A very simple recipe idea that I like to make and which generally amazes my guests:mix the tops with a tablespoon of olive oil , salt, pepper, and spread this mixture on stale bread that you have grilled. Cover with radish slices, season with a drizzle of vinaigrette. Delicious!
