Risotto is a typical Italian dish that is made with rice and varied ingredients that you can choose according to your tastes and desires.
It's an inexpensive recipe and that's why it's cooked and loved all over the world!
Let's discover today, a risotto with mushrooms and parmesan, an easy recipe and 100% pleasure.
- 250 g of round rice:€1.55 per kilo, i.e. €0.39
- 300 g of mushrooms (from Paris, for example):at €3.96 per kilo, i.e. €1.19
- 100 g of grated parmesan:€19.83 per kilo, i.e. €1.98
- 2 chicken stock cubes:around 20 g at €7.42 per kilo, i.e. €0.15
- 10 cl of fresh cream:€3.15 per liter or €0.31
- 1 glass of white wine:around 20 cl at €3 per liter or €0.60
- 1 onion:around 125 g at €1.85 per kilo, i.e. €0.23
- 1 knob of butter
- Salt &pepper
Either a risotto costing me €1.21 per person or at €4.85 for 4 guests.
1. I rinse my mushrooms under running cold water, dry them and then slice them.
2. I peel then finely chop my onion.
3. In a skillet, I melt my butter then I add my mushrooms and half of my minced onion. I let it cook for 3 minutes over low heat.
4. I then add half of my glass of white wine and simmer for 2 minutes so that it reduces.
5. I add my fresh cream, I salt, pepper and reserve my preparation in a dish.
6. I boil 1 liter of water in a saucepan in which I dilute my bouillon cubes.
7. In the same skillet, I pour 1 tablespoon of olive oil and the rest of my chopped onion. I let it cook for 3 minutes so that it browns slightly.
8. I add my rice and mix. I let it cook for 2 min (it should become transparent) and I add the rest of my glass of white wine.
9. I pour a ladle of my broth and mix. Once the liquid is well absorbed by my rice, I pour a new ladle and so on until my rice is well melted and my broth exhausted. It takes about 20 min.
10. Once my rice is cooked, I add my parmesan and my mushroom preparation. I leave to heat over low heat for 2 minutes and I serve very hot!
