Advertorial – A nice lunch is always welcome, but we don't always feel like or have the time to spend a long time in the kitchen. You can easily make this sandwich with roasted vegetables and basil.
For the sandwiches we used the new Becel, which is 100% vegetable. Choosing plant-based is a great way to eat well, take good care of yourself and it is also better for our planet. A shift to plant-based foods helps, among other things, to lower greenhouse gas emissions. Nice to have, right? Enjoy your meal!
Ingredients
- 1 zucchini
- 1 eggplant
- 1 red bell pepper
- 2 tbsp pine nuts
- A few leaves of fresh basil
- Becel 100% vegetable
- 6 slices of bread
- Olive oil
- Grill pan or oven dish
Get started
- Cut the zucchini and aubergine into thin slices lengthwise with a cheese slicer. Cut the bell pepper lengthwise into strips.
- Drizzle the vegetables with some olive oil and grill them in a grill pan or in the oven.
- In the meantime, fry the pine nuts in a frying pan until golden brown.
- Spread the sandwiches with a layer of Becel 100% vegetable (also suitable for vegans!).
- Place the toasted slices of zucchini and aubergine on two slices of bread. Add some basil and pine nuts. Place the roasted peppers, basil and pine nuts on the other slice of bread and stack the three slices of bread on top of each other. Cut in half diagonally.
