Recipe for vegetarian burritos

Do you sometimes find it difficult to come up with vegetarian recipes? During the Week Without Meat we will inspire you with a number of recipes.

Ingredients

  • Burritos
  • 12-16 tortilla wraps carrot from No Fairytales or regular wraps
  • 4 vine tomatoes
  • 200 gr iceberg lettuce
  • 1 green pepper
  • 200 gr corn
  • 200 gr black beans
  • 4 avocados
  • Grated old cheese
  • Sour cream
  • Bunch of coriander
  • Tortilla chips

Vegetarian minced meat

  • 2 packs Minced Garden Gourmet
  • 1 tsp cumin powder
  • 1 tsp cayenne pepper
  • 1 medium red onion
  • 1 garlic clove
  • 4 tbsp tomato puree
  • Water
  • 2 tbsp olive oil

Preparation method
1. Chop the red onion and crush the garlic clove. Dissolve the tomato paste in some water.
2. Heat a wok and add the olive oil. Saute the onion and garlic in it and then add the minced meat. Season with cayenne pepper, cumin and the tomato puree.
3. Cut the bell pepper into cubes and fry briefly if desired. Remove the seeds from the tomatoes and cut into cubes. Drain the corn and beans. Cut the iceberg lettuce into strips
4. Mash the avocados and season with some salt and pepper.
5. Place the avocado, tomatoes, bell pepper, corn, beans, iceberg lettuce and the vegetarian mincemeat in bowls.
6. Heat the tortillas in a frying pan and serve together with the grated cheese, sour cream, coriander and tortilla chips.
7. Make your tortilla the way you like it best.
