"Mom, what's for dinner tonight?" my two darlings shout in unison. “Lentils”, I answer. "WHUT? lenses?” calls one. And the other, "Gatver, lice?" Obviously, this will be my first time serving my kids lentil soup. They've never heard of lentils (even the man in the house looks a bit strange when he hears this), but I'm convinced that it's time for a little variety in our cuisine and our soup recipes. In addition, after all those liflafjes at Christmas, New Year's Eve and New Year, I am ready for healthy food. Soss… making lentil soup is on the agenda!

The children soon resign themselves to it - they love soup - and continue with their holiday worries. I, on the other hand, am desperately looking for pen and paper to make a shopping list. Because what do you actually do with a lentil soup? I know it by heart about my zucchini soup, but making a lentil soup is a different story.
I now know that you can throw in anything and that you don't have to worry so easily that it won't taste good, but I'll give you my own version of lentil soup, which we all found extremely tasty!

How do you make a lentil soup? I can tell you… making this soup with lentils is a breeze.
Saute the garlic and onion in some olive oil. Add the bay leaf, thyme, eggplant, bell pepper, mushrooms and tomatoes and fry for a while.
Fry the bacon cubes briefly in a separate pan. When they are crispy fried, add them to the vegetables. Pour in the chicken stock and add the lentils. Let it simmer for 15 minutes and then add the spinach. When the spinach has shrunk (after a few minutes) your lentil soup is ready to eat.
Spoon into a bowl, add a spoonful of Greek yogurt in the center and sprinkle with some parsley.
With a soup maker you can also easily make a soup without having to stay with it.
We combined the lentil soup with a baguette from the oven, and that was more than enough for an excellent filling meal. The baguette is not really necessary, but it is tasty.
The children loved the lentil soup, even though they shouted in unison 'jasses, that looks dirty' when it was served, but hey… these days I don't hear much else if we don't eat pizza or fries 😉 . The only thing Lotte had a little trouble with was the spinach that was in it. She thought it was too much and it wasn't the spinach she's used to eating (à la crème, you know it). Personally, I really liked the spinach through it! As far as we are concerned, this is highly recommended if you are looking for a well-filled meal soup and making lentil soup is definitely more on the weekly schedule.

If you have enough left over, you can of course just put it in the freezer for the next time you don't feel like (or have time) to cook. Do you only have a little bit left? Do not throw away! It has probably thickened a bit because you already ate the 'juice of the soup' the previous day, but did you know that this leftover is very tasty to fry with an egg for lunch? Then it will look like the picture above. I threw 2 eggs into the pan, then added the leftover lentil soup – heat it up – and your delicious hot lunch is ready!
