Here is a recipe for lentil soup, easy to make and really economical.
It will be ideal to taste in this winter season!

- 500g lentils (blonde or green)
- 2 beautiful carrots
- 4 potatoes
- 2 onions
- 2 liters of water
- salt &pepper
1. I peel the onions, carrots and potatoes then cut them into small pieces.
2. I pour about 2 liters of water into a large saucepan and I add the lentils and cut vegetables then I mix.
3. I salt and pepper, cover the pan and cook over high heat.
4. As soon as the preparation begins to boil, I lower the heat and let it simmer for 2 hours.
There you go, the lentil soup is ready :-)
Easy, right?
I serve it hot with bread croutons that I make with my leftover stale bread.
What should I do if my soup is too thick?
When cooked, the lentils will swell and make your soup very thick .
To thin it, do not hesitate to add boiling water when cooking.
And if you prefer it smoother, you can also blend it.
- 500 g of lentils:€1.70 per kilo, i.e. €0.85
- 2 carrots:about 250 g at €1.20 per kilo, i.e. €0.30
- 4 potatoes:around 480 g at €0.70 per kilo, i.e. €0.34
- 2 onions:around 125 g at €0.80 per kilo, i.e. €0.10
