To prepare your waffle batter, you need basic ingredients:flour, sugar, eggs, butter, milk, a little baking powder and a pinch of salt. The recipe is very simple:for 4 people, mix 250 g of flour with half a sachet of baking powder, a pinch of salt and 125 g of caster sugar. Then add 2 whole beaten eggs and 50 g of melted butter. Gradually add 20 cl of milk, mixing well so as not to make lumps. The best, then, is to let the waffle batter rest for about 1 hour in the fridge before baking the waffles. You can also, if you wish, replace some (or even all) of the milk with beer or water. This will allow you to obtain lighter but also crispier waffles. Another tip for airy homemade waffles:beat the egg whites before incorporating them into the batter.
The easiest and fastest way to cook your waffles is to use a waffle maker. You will thus obtain pretty, well-golden and well-designed waffles. Just make sure the waffle maker is hot before baking your waffles. To do this, pour a few drops of water on the plates. If they sizzle for 2 or 3 seconds before disappearing, the temperature is good. If they disappear in less than 2-3 seconds, your waffle maker is too hot. Another tip:don't put too much batter in your waffle iron, as it will tend to spread and puff up. It therefore risks overflowing.
Don't have a waffle maker? Rest assured:there is another solution! In fact, there are silicone waffle molds on the market today. Simply pour the waffle batter into the molds and bake them in the oven for 10 to 20 minutes. It's up to you to test and taste your waffles for example with a good hot chocolate!
