Cheese makes wine better, a French study recently taught us. It is still necessary to have a sufficiently fine nose to associate the right products! For the less experienced, there is an alternative solution:Wine and Cheese Map, a site that tells us which wine to drink with the cheese you want to taste, and vice versa.
It all started when Gary Bader, a professor at the Terrence Donnelly Center for Cellular and Biomolecular Research at the University of Toronto, started working on a technology called Cytoscape, for finding new relationships in large data sets. His wife, who loves wine and cheese, then suggested that he use this system to find the perfect pairings between these dishes. It's done today!
To impress your dinner guests, just type the name of the selected cheese or wine into the site's search engine. A list of suggestions then appears as if by magic! To refine your search, you can even select the type of wine or cheese you want as well as its origin. In all, Wine and Cheese Map offers 1,000 cheese/wine pairings and the scientist does not intend to stop there:he soon hopes to offer beer/cheese and champagne/cheese pairings. Not sure the result will be as tasty…
