A small marvel of Italian cuisine, tiramisu thrills the taste buds of many gourmets. For your greatest pleasure, pastry chef Yann Couvreur has just unveiled his grandmother's tiramisu recipe, something to rejoice about. A perfect recipe for this summer.

-5 eggs
-40 grams of flour
-30 grams of soluble coffee
-20 grams of marsala
-50 grams of sugar
-100 grams of brown sugar
-250 grams of mascarpone
-1 ristretto
-icing sugar
-25 grams of water
1 era step:the preparation of the cookie:
Beat two egg whites then add 10 grams of sugar before beating again.
In another container, mix 40 grams of sugar and two egg yolks until they whiten. Gently fold the egg whites into the mixture using a spatula. Finally, add the sifted flour.
Place the preparation in a piping bag to pipe the boudoir biscuit into flexible silicone moulds. Add a little icing sugar on top. Put everything in the oven at 170° for 10 minutes.
During the cooking time, mix the coffee, water, marsala and ristretto in a container in order to quickly dip the biscuits into it afterwards.
2 th step:preparing the mascarpone cream
For the cream, whiten three egg yolks with the brown sugar. Then add the mascarpone and mix. It is important that the preparation is smooth.
Beat three egg whites with a little sugar and incorporate them into the preparation using a spatula.
3 th step:editing
In a cake mould, layer the mascarpone cream then the coffee-soaked biscuits. Repeat the operation to the top of the mould.
Finish with a layer of mascarpone. Place in the fridge for 6 hours. Finally, sprinkle the preparation with cocoa powder. All that's left is to taste. Bon appetit!
