GENERAL INFORMATION

  • Recipe for 4 people

INGREDIENTS

  • 1kg of minced lamb shoulder
  • 400g fresh tomatoes, diced
  • 1 peeled onion
  • 1 clove garlic, peeled
  • 1 sprig of thyme
  • 3 eggplants, washed
  • 10g ground cumin
  • 100g grated parmesan cheese
  • Olive oil
  • Fine salt and ground pepper

Moussaka by Cyril Lignac:the preparation steps

  1. In a hot casserole dish, pour a dash of olive oil, the cumin, add the cubes of two aubergines, let them cook until they brown slightly, add the chopped onion, continue cooking until browned.
  2. Then add the meat, season with salt and pepper, let it cook and release the natural juices from the meat, then let it caramelize, add the garlic and thyme.
  3. Add the tomatoes and cook for 15 minutes, check the seasoning for fine salt. Set aside.
  4. Preheat the grill oven to 240°C.
  5. Peel the last aubergine, cut it into slices 0.5cm thick, season with fine salt and grill the slices in a pan with a little olive oil.
  6. In the dish, place the eggplant slices, stuffing on top and cover with eggplant slices, finish with the grated parmesan.
  7. Bake for 6 minutes.
