Oriental salad with chickpeas

Ingredients for 6 people

  • chickpeas:a large can or 200 g dried
  • 3 beautiful tomatoes or the equivalent in cherry tomatoes
  • 1/2 green or yellow bell pepper
  • 1 clove of garlic
  • a few sprigs of mint
  • a few sprigs of coriander
  • a dozen black olives
  • 1/2 lemon juice
  • 1/2 glass of olive oil
  • salt and pepper

Preparation

Mix the ingredients in a salad bowl:rinsed and well-drained chickpeas, lemon juice, minced pepper, olive oil, pressed garlic, chopped mint and coriander, olives, tomatoes cut into small pieces, salt and pepper.

Refrigerate so the salad will be fresh when you serve it.

Ideal to accompany grilled meats on the barbecue!
