The Green Mojo ( Mojo Verde) is gladly served with fish, cooked in court-bouillon or fried.
Ingredients:5 cloves of garlic, 1 green sweet pepper, 1/2 cup of olive oil, 1 dash of wine vinegar, sea salt.
Crush the peeled garlic and sea salt in a mortar.
Add the green chilli cut into small pieces, after removing the seeds. Continue to pound everything.
Slowly add the olive oil and wine vinegar, and mix well.
You can also refine your mojo verde with fresh parsley or cilantro. To do this, add the chopped parsley or coriander in the mortar
