“Mojo” – the typical sauces of the Canary Islands are available in green and red. The spicy variant "Mojo picón" with chili, garlic and more, immediately provides that holiday feeling. With potatoes it becomes a small main course.
2 – 4 dried chillies (to taste)
1 bulb of garlic
1 teaspoon salt
200 ml neutral oil
100 ml white wine vinegar
½ teaspoon cumin
½ teaspoon hot paprika powder
1 pinch of saffron powder
Pour boiling water over the chillies, soak for 1 hour – remove the seeds and cut into rings. Peel and coarsely chop the garlic. Mix the peppers, garlic cloves, salt, cumin, paprika powder, saffron powder and 50 ml vinegar to a homogeneous mixture. Keep mixing and pour in the oil.
