Spaghetti Carbonara recipe

Spaghetti Carbonara with cream is nice and easy, but it is not the authentic Italian recipe. The real recipe is based on eggs.

The trick is to let the eggs and cheese melt together while stirring well into a sauce that is creamy enough on its own. The egg must not solidify.

Ingredients for 4 people

  • 400 g spaghetti della mamma
  • 100 g pancetta or smoked bacon
  • 2 cloves of garlic (or 2 tsp minced garlic)
  • 100 g pecorino cheese
  • 3 eggs
  • 8 tablespoons garlic olive oil
  • Salt
  • Black pepper

Preparation
Cut the pancetta into small pieces, mince the garlic and combine both.
Grate the cheese and mix with the eggs. Cook the Spaghetti della Mamma according to the
packaging instructions. Spoon the pasta together with some remaining liquid into the bacon-garlic
mixture and bring to the boil with Garlic olive oil and black pepper. Remove
the pan from the heat and let it cool slightly, now add the pecorino and egg mixture
while stirring constantly. Season with salt if desired. Place in a bowl or on
a plate and serve immediately.
