Hazelnut wreath recipe

Hazelnut wreath recipe, delicious for in between, perfect for autumn. The weather is getting colder and the desire to be in the kitchen increases. Inspired by hazelnuts that are now starting to ripen everywhere, I made a delicious recipe hazelnut wreath. With handy step-by-step manual for easy copying yourself.

Additional tip :Baked goods are generally quite expensive in the Netherlands. If you are looking for affordable baking products, I advise you to go to Germany. A pack of ground hazelnuts costs about 0.70 euros there.

  • 300 grams Flour
  • 2 tsp Baking powder
  • 100 grams Sugar
  • 1 packet vanilla sugar
  • 1 Egg (room temperature)
  • 2 tablespoons Milk
  • 125 grams Butter (room temperature)
For the filling
  • 200 grams Hazelnuts (ground)
  • 80 grams Sugar
  • 1 Egg yolk
  • 1 Protein
  • 3-4 tablespoons Water
For on the wreath
  • 1 Egg yolk
Preparation
  1. First mix all dry ingredients together


  2. Then mix in the cut butter. Dough can be made by hand or by machine. Since I have a new food processor, I use it and I have to knead less

  3. Roll out dough on a piece of baking paper (dough should be about cm thick after rolling out)

  4. Preheat the oven to 180˚C

  5. Place the ingredients of the filling, except the egg white, in a bowl and mix well.

  6. Beat egg whites separately until stiff and then stir into the hazelnut mixture

  7. Then spread the hazelnut/protein mass on the dough. Keep a piece of dough free around

  8. Moisten the remaining edges with some egg yolk or water. This is necessary to allow the dough to stick together properly during rolling

  9. Then roll up the dough on the long side. If you have put the whole thing on a piece of baking paper, you can make it easier to roll up with the help of the baking paper

  10. When the whole is rolled up, you form a wreath. Pull the ends together a little and pinch it closed

  11. Cut the top in zigzags with a knife to avoid tearing

  12. Smear with some beaten egg yolk to which a little bit of water has been added

  13. The hazelnut wreath is baked in about 25 – 40 minutes. The baking time depends on the oven

The hazelnut wreath tastes best when left to steep for a few days. Of course I don't know whether you can wait that long (at least you can't do that here at home).
