Bazas prime rib, Charlotte apple cake with sweet red onion, compound butter

Sear the rib on each side in a very hot pan, it takes 8/10 minutes on each side, leave to rest

When reheating in the oven, laying a slice of compound butter on top

Accompany with the small potato cake, add Guérande salt and mignonette in a ramekin, garnish with a bay leaf and a sprig of rosemary.

Finely chop the red onions, blanch them in salted boiling water, rinse and leave to cool,

Cut the peeled potatoes into strips (robot-cutter)

Mix the whole eggs with the yolks, add the cream, add the coriander, and the chopped chives, salt and pepper to taste,

Butter circles of 8, place them on baking paper,

Arrange a layer of potatoes, a little sauce, then a layer of red onions, a little butter and so on until the mold is filled

Bake at 180°C
