Rice is the most cultivated cereal in the world, in all latitudes and all climates. Source of vitamins and mineral salts, it has a great power of absorption and its energy qualities are important (250 Kcl per 100 g). Embellished with candied fruit, Hubert's rustic rice tart is as economical as it is delicious.
In a bowl, mix the flour, a pinch of salt and the water. Roll out this dough with a rolling pin, line the buttered tart mould, prick it and bake it for 10 minutes in a moderate oven.
Macerate the grapes in the rum.
Wash the rice.
In a saucepan, cook it for 5 minutes in boiling water. Drain it, pour it into the boiling vanilla milk (the pod split open). Cook everything over very low heat for thirty minutes, then add the caster sugar and cook for another 15 minutes.
Remove the vanilla, incorporate the soaked raisins and the candied fruit, garnish the pie with this mixture, cook it for 10 minutes in a moderate oven.
Glaze with icing sugar and decorate with mint leaves. It can be served with Crème Anglaise and raspberry coulis, while enjoying a glass of champagne “Billecart Salmon rosé” with fine and elegant bubbles.
