Preheat the oven to th.7 (210°C). Roll out the dough with a rolling pin and line a 28 cm diameter tart tin.
Beat the egg white with a fork without letting it foam. Brush the dough with it, up to 2 minutes from the edge.
Cut the apples into 6, peel them and remove the core. Heat the oil in a frying pan, add the butter and brown the apples over low heat, 5 minutes on each side. remove them and let them cool before arranging them on the dough.
Bake for 25 minutes, then sprinkle with granulated sugar and mixed spices. Bake for another 5 minutes then remove the pie from the oven.
Serve as is or with fresh cream.
