Royal Green now also has coconut blossom sugar in its range. What can you actually do with that? Baking for example! Like a delicious apple pie.
The ingredients
For 8 people
– 400 grams self-raising flour
– 180 grams coconut oil
– 180 grams coconut blossom sugar
– 1 egg, beaten
– 1 kg firm apples
– 1 tablespoon lemon juice
– 1 teaspoon cinnamon
– 1 teaspoon lemon zest
– 1 tablespoon custard powder
– Pinch of salt
– Optional:100 to 150 grams of dried fruit and/or 50 to 100 grams of walnuts.
Step 1
Preheat the oven to 180 degrees, or 160 degrees for a convection oven.
Step 2 Cut the apples into even sized pieces and place in a bowl with the lemon juice and cinnamon. Add the dried fruit and walnuts if desired.
Step 3
Grease a springform pan with some coconut oil. Crumble the cold coconut oil in a large bowl. Add the coconut blossom sugar, lemon zest, salt and two tablespoons of the egg. Mix it with a mixer until it becomes an even mass. Sift the self-raising flour over the mixture and mix well.
Step 4
If it is too dry, you can add a tablespoon of water. Roll out the dough, leaving about a quarter to make dough strips on top of your pie. Line the bottom and sides of the springform pan with the dough.
Step 5
Prick a few holes in the bottom and sprinkle with the custard powder. Arrange the apple pieces neatly in the mold and cover the apple pie crosswise with the pastry handles. Brush it with the rest of the beaten egg.
Step 6
Bake the cake for about an hour until golden brown.
