The most famous Florida dish is probably the Key Lime Pie. Legend has it that the dessert was invented in the Florida Keys in the 1800s by Aunt Sally, who worked as a cook there. Because there were no cows, refrigerators or other cooling options, there was a shortage of fresh milk. Aunt Sally mixed the delicacy known today as Key Lime Pie from long-life condensed milk, egg yolk, and lime juice. There are now countless variations on the refreshing dessert and in the Florida Keys every restaurant, no matter how small, offers its own interpretation to the cake. A 22cm graham cracker pie crust
35 grams sweetened condensed milk
4 egg yolks (The egg whites can be saved to make a meringue topping, if desired. See meringue recipe below.)
85 ml lime juice
Mix the milk and egg yolks on low speed until smooth. Add lime juice and finish blending.
Pour into pie crust.
Bake in a preheated oven at 175°C for 20 minutes.
In the meantime, if you wish, make the following meringue recipe.
Chill the pie for 20 minutes
Serve chilled Key Lime pie with whipped cream topping or meringue.
4 egg whites
5 tablespoons sugar
Pinch of cream
1 teaspoon vanilla
Beat the egg whites, sugar and vanilla on high speed. Add cream. Keep beating until the egg white is stiff. Spoon the meringue on top of the cake and bake for another 10 minutes.
