Separate the egg whites from the yolks. Work the yolks with the sugar until the mixture whitens.
Add the butter, spices, baking powder and sifted flour.
Moisten with milk to obtain a soft paste.
Pour it into a buttered and floured mold. Cut the apples into quarters, keeping them whole, divide them into slices without going to the end, the slices must remain maintained at their base. Arrange them on the dough at regular intervals.
Bake in medium oven for 40 minutes.
Then briskly coat the apple quarters with redcurrant jelly or apricot jelly. return to the oven for 5 minutes.
Leave to cool and sprinkle with icing sugar.
