Thaw the lamb slices in an airtight container under hot water.
Preheat the oven to th.7 (210°C).
Cut 4 squares in aluminum foil, oil them. On each, place a slice of lamb, sprinkle with garlic and 1 tablespoon of thyme, add a quarter of tomato. Season with salt and pepper, close the parcels loosely so that the hot air can circulate.
Pour the duchess potatoes into a baking dish. Bake them for the cooking time indicated on the bag (about 10 minutes).
Bake the papillotes a little later and count 10 minutes of cooking.
Serve them with duchess potatoes, salted at the last minute.
