Cut the melon in half, remove the seeds and empty it of its flesh. Squeeze the lemon to extract the juice.
Mix the flesh of the melon with the lemon juice, nutmeg, cloves and 10 cl of water. When the mixture has the consistency of a soup, pour it into a soup tureen and keep it cold for at least 1 hour.
Meanwhile, cut the slices of raw ham into small dice. Just before serving, mix the diced ham with the melon soup, season with pepper and garnish with a few mint leaves.
Serve chilled.
