Wash the potatoes and steam them for 10 to 15 minutes. Let them cool. Cut them in half, then hollow them out. Beat the very cold liquid cream into whipped cream, salt and pepper, add the horseradish and mix. Garnish the potatoes and decorate with the salmon roe and fine herbs.
Cocktail (1 glass):Pour the chilled champagne into a glass. Add the sugar, 2 dashes of Angustura and 2 dashes of cognac.
Serve.
