Chocolate and pecan nut cake

  • bitter dark chocolate (with at least 52% cocoa)
    400 g
  • powdered sugar
    200g
  • flour
    150 g
  • eggs
    12
  • pecans
    150 g
  • butter
    40g
  • salt
  • Icing:bitter dark chocolate
    100 g
  • liquid fresh cream
    10 cl
  • green and pink marzipan
  • colored sugar (or colored vermicelli)

Prepare the cakes:melt the chocolate in a bain-marie with 2 tablespoons of water. Crack the eggs, separating the whites from the yolks. Keep the whites cool. Whisk the yolks with the sugar until the mixture whitens. Add the melted chocolate and mix well. Sift the flour and fold it into the mixture.

Lightly salt the egg whites and beat them very stiff. Gently fold them into the chocolate mixture. Preheat the oven to th 6 (180°C). Mix the pecans and mix them into the batter. Butter two springform pans of different sizes and spread the mixture between them. Bake for 30 minutes. Unmold the cakes and let them cool.

Prepare the glaze:melt the chocolate in a saucepan then add the liquid cream. Mix until the whole is smooth and creamy. Remove from heat. Layer the cakes and with a spatula, coat them with chocolate frosting. Decorate with a marzipan rose and colored sugar.
