Prepare the pancake batter. Mix the eggs and sugar while whisking, add the flour, then the milk and finally the melted butter. Let the dough rest at room temperature for 30 minutes. Bake 9 pancakes and let them cool.
Prepare the mousse:place the chocolate in a bowl, add 1 tablespoon of water and melt it in the microwave for 2 minutes (or in a bain-marie). Separate the egg yolks from the whites, add the butter in pieces to the melted chocolate then the yolks one by one and 80 g of icing sugar. Mix all these ingredients well. Whip the egg whites until stiff. Mix them with the chocolate, lifting the preparation. Whip the whipped cream using an electric mixer. Add it to the mousse. Add the diced orange peel. Leave to harden in a cool place for at least 1 hour.
Arrange 3 pancakes on a dish, cover them with chocolate mousse using a pastry bag or spatula. Layer 3 crêpes, 1 layer of mousse and 3 more crêpes.
Decorate with chocolate and mint. Sprinkle with icing sugar.
