This dessert is the ideal recipe to refresh the taste buds with subtlety and sweetness. A veritable festival of flavors and vitamins! Combination of fondant and crunchy, the exoticism of vanilla and the acidity of yellow peach, in a single stroke of the spatula, you win all the votes! Treat yourself, it's summer!
* Peel the peaches, open them in half, pit them and cut them into cubes.
* Roll the raspberries on a damp cloth.
* Coarsely crush the meringues.
* In a salad bowl, whip the liquid cream, which must be very cold, into whipped cream (add a crushed ice cube).
* When it is very firm and forms peaks, add the icing sugar, then incorporate the rose water, always whipping. Reserve in the refrigerator.
* Take 8 large glasses or coupes.
* Spread the diced peaches and raspberries at the bottom of the glasses, put a layer of crushed meringues on top, place a scoop of ice cream vanilla, then a tablespoon of whipped cream.
* Sprinkle with coarsely crushed pistachios and serve the Vacherins immediately.
The little extra:it is better to choose white peaches. If desired, you can toast the shelled pistachios for 2 to 3 minutes on the oven tray.
