Cook the sliced apples into a compote with the sugar, the vanilla pod split in two and the lemon zest. Dry while stirring. Let cool.
Turn on the oven at th.8 (240°C).
Cut the bread into thin slices and butter them. Toast them on the buttered side in the toaster or under the broiler.
Line the bottom of a charlotte mold with slices cut into triangles, then the wall with rectangles, overlapping them, grilled on the outside.
Fill with compote, with a layer of bread in the middle. Bake for 25 minutes in the oven, lower it to 7 (210°C) after 10 minutes.
Unmold the cooled charlotte and serve with custard
