Chocolate cakes

Ingredients for 30 palets

  • 125g of liquid cream
  • 225g bitter chocolate
  • 1 egg yolk
  • 1dl of coffee

Preparation

To start, chop the chocolate into small pieces. Set half aside, and the other half in a container.

Then heat the cream in a saucepan. Pour a ladle of lukewarm cream over the egg yolk, to liquefy it, and pour everything back into the saucepan. Bring to a boil.

Then pour the hot mixture over the chocolate in the container. Add the coffee.

Take a whisk and mix gradually. Once you have obtained a very thick ganache, you can pour it into a very flat container (the height should not exceed 2cm.)

Put the preparation in the fridge, until it has cooled down. When it has cooled down, take it out of the fridge and cut into equal pieces.

Meanwhile, melt the rest of the chocolate in a bain-marie. Then dip the slices in the melted chocolate using a fork.

Let cool before serving.

Idea :Accompanied by a coffee, the chocolate palets will be perfect for a snack with friends.
